Will moving from the stock tire size to a 225/60/15 really make a difference in acceleration? If so why is this the case?

you would be fine it would be faster because your going smaller then stock

You will notice your RPMs being higher at almost any speed. Unless you regear, your engine will be turning more RPMs than it would with stock tires.
