Towing a 2001 S-10 Crew................
I want to tow my Crew behind the motor home, 4 wheels on the ground. Anything I should Know about? Will the tow miles rack up on the odometer?

Get a driveline disconnect so that you do not damage the transfercase or transmission. I helped a friend install one on his Blazer. Not cheap.
You can also pull the rear driveshaft , but that may not be much fun.

What about the odometer? Will all the tow miles register on the crew?

The way I understand it (and my wife says I'm usually wrong) the NP231 transfer case that I had in a 91 S10 with the manual shifter instead of the buttons could be put in neutral and was good to go being towed. The NP 236 transfer case with the 4 button control could be put in neutral by pushing a 2 button combination and were suitable for towing.
The 3 button NP233 that most of us have is not set up to have a neutral so towing more than a very short distance could cause damage due to no oiling.

The easiest and safest method would be a car/truck dolly and disco the rear drive shaft at the axle and tie it up, out of the way.

Get a trailer rated for weight of the s-10. Get some good straps and tie it down. Trailers are meant to be towed, your s-10 isn't.

How much weight can your motor home safely tow (tow rating)? Most of the vehicles I see being towed behind motor homes are small cars or small SUV's. The CC seems kind of big and heavy to be towed that way. Does anyone make a fold up front mount hitch for the CC?

Blueox makes tow bars and front mounts rated heavy enough for our trucks. blueox.com You'd have to check with them if they make a fold-up for it or not. My guess is yes. I used to work there.
