I am going to change the fuel filter. This looks like a fun job

I am also going to change the fluids in the transfer case and both diffs. I had the dealer do the G80 required fluid change at about 4000 miles. I have never done this before, and have a few questions.
1. Is there a torque spec for the bolts on the rear diff cover or can I just tighten normally?
2. How do I get the fluid in the diffs and t-case? It looks as if there is no room to tip a bottle up into the fill holes. I am thinking of using a funnel with some tubing on it and helper to either pour the fluid in the funnel or hold the tube in the fill hole.
3. The t-case takes DEX III, can I use any GL-5 rated 80W90 for the diffs or do I need to use the stuff from the dealer?
I will do a trans fluid purge and filter change in another 5-10k miles.
